Big-ticket parts
Water heaters, sump pumps and fixtures are worth their own lines with the size or model, so the customer can register the manufacturer warranty. Fittings and small parts can be grouped on one line.

Haul-away of an old unit and after-hours call-out charges should be separate lines with plain descriptions. Customers dispute bundled charges far more often than itemised ones, and a separate line also shows the call-out was agreed before you arrived.
Questions
Should I list the water heater model?
Yes. Put the size and model in the description. It helps the customer claim the manufacturer warranty and helps the next plumber who works on the system.
How do I show a flat-rate price?
Use a single labor line with a quantity of 1 and the flat price as the rate, and describe the job clearly. You can still list the main parts at zero or as included if you want them on record.
Can I add a warranty on my labor?
Yes. Put your labor warranty in the terms box, for example one year on workmanship, next to the manufacturer warranty on the unit itself.
