Writing the usage license
State what the client may do with the images: the media, the duration and the territory, such as "web and social, one year, worldwide". Tying the license to payment in the terms makes it clear that use depends on the invoice being paid.

Price retouched finals per image and list extra selections or rush delivery as their own lines, so the client can see why this invoice differs from the quote.
Questions
Do I keep the copyright when the client pays?
By default the photographer keeps copyright and licenses the use. If you are transferring copyright, say so explicitly in the terms and price it on its own line.
How do I invoice a wedding in stages?
Send a deposit invoice when the date is booked, then a final invoice before or after the day with the deposit entered in the amount paid box.
Should prints be taxed?
Physical prints and albums are usually taxable goods, while the treatment of digital files and services varies by place. Tick or untick taxable per line to match your local rules.
